Sweet Potato Gnocchi with Bacon Cream Sauce

Sometimes you just have to improvise with the remaining contents in your kitchen. I refused to take a trip to the grocery store, so I decided to make do with whatever I could find. Meal prep is always way more relaxing on the weekends, so I am more open to experiment. I searched around Pinterest for inspiration and decided to try making a sweet potato gnocchi. I was inspired by this recipe I found on Kath Eats Real Food. I know that sweet potato and bacon is a winning combination because I have used them together in soup before. 

Serves 2
Duration 1 1/2 hour
Cook time 1 hour or so

Ingredients For Gnocchi
1 Cup of Flour (I used whole wheat)
1 Egg
1/4 Cup of Parmesan Cheese
1 Sweet Potato
1/2 Teaspoon of Paprika
1/2 Teaspoon of Cayenne
Salt to Taste

Ingredients for Sauce
1 Sprinkle of White Pepper
1 Tablespoon of Thyme
1 Tablespoon of Cornstarch
3 Tablespoons of Butter
6 Slices of Bacon
1/2 Cup of Cream
1/2 Cup Spinach
(You can add more Cayenne to the sauce if you would like more heat)

Directions

  1. Preheat oven to 400 Degrees. Once oven is heated, place sweet potato in the oven for 30 – 40 minute depending on the size of the potato. The potato is cooked when it is easy to poke with a fork.

     

  2. Heat a large pot up with water, a drop of oil and salt.

     

  3. Prepare flour mixture by adding paprika, cayenne and parmesan to the flour. 
  4. Remove potato from oven and mash up in bowl. Wait until cools (5 – 10 minutes) and add an egg.

     

  5. Slowly shift flour into the bowl with potato, until consistency is no longer sticky.

     

  6. Roll and cut into one each pieces and lay on flour dusted baking sheet.

     

  7. Place bacon in fry pan and cook to desired crispiness. 
  8. Remove bacon from frying pan and add thyme, butter and white pepper. 
  9. Place gnocchi in the pot with bowling water and wait until they rise to the top.
  10. Cut up bacon and place back in frying pan, mix together cornstarch and cream, and add spinach.

     

  11. You can skip this step, but I like my gnocchi crispy, so I browned my gnocchi in another frying pan with butter.

     

  12. Once cream sauce is thick, stir in gnocchi and then serve.

     

It is not the healthiest meal, but it is good comfort food for those chilly days. I would recommend serving it with a light salad because it is quite a rich meal.
