I fell off the wagon hard yesterday, I faleo-ed hard! Lets just call it a cheat day. Not only did I forgo my usual fitness tracker app because I am way too embarrassed to even admit to myself what I ate, I let portion control go out the window. My boyfriend and I had planned on going to an outdoor movie. Once he was showered and ready to go, it was 8:00 and I still hadn’t eaten yet. Our dinner consist of cookies, chips, macaroni and cheese and fried chicken! Today I feel nothing but shame. I started today with a healthy smoothie, and I had a salad and protein for lunch. For dinner I mixed things up and decide to make fried rice (Paleo style of course).
Chicken Cauliflower Fried Rice (2 Servings)
Ingredients
1 head of cauliflower
2 eggs (beaten)
2 – 4 chicken thighs (depending on the serving size
Assorted vegetables ( I cut up 2 celery stalks, 1 carrot, half a pepper and some green onions)
1 – 2 tablespoons sesame oil
2 tablespoons gluten free soya sauce (not so Paleo…)
Directions
- Cut the cauliflower into pieces and blend in the food processor. In the meantime, cut up the chicken thigh and the vegetables into bite size pieces.
- Heated up a large frying pan with two tablespoons of sesame oil. Fry the cauliflower than put it aside. Add chicken to the pan and fry until fully cooked. Poured a little bit of soya sauce onto the chicken to give is some taste. Once the chicken is cooked through, add the beaten egg and vegetables to the frying pan.
- Re-add the cauliflower to the pan. Drizzle in soya sauce, taste as you go.
A quick, and easy recipe. It doesn’t taste exactly like fried rice, but it is still pretty satisfying.
