I threw together this jerk chicken salad and posted it on my Instagram Story and got quite a few comments. I thought I might as well post the recipe. This is the perfect meal for a hot summer day when you don’t want to turn on your oven.
Jerk Chicken – for at least 4-6 hours | Overnight is preferable
Makes 2 -3 Servings
Ingredients
- 1/2 Packet of Onion Soup Mix
- 3 Tablespoons of Olive Oil
- 3 Tablespoons of balsamic vinegar
- 1 Tablespoon of Grace Jamaican Jerk Seasoning
- 6 Chicken Thighs
Jerk seasoning is very spicy, so I try to combat the spice by adding other elements. I will usually use a balsamic dressing to dilute the seasoning.
Directions
- Mix together all the ingredients for the marinade in a containers and then add in the chicken.
- Seal the container and let the chicken marinade for 4-6 hours. If possible leave overnight.
- Heat BBQ to medium high setting
- BBQ chicken for 15 minutes on either side (duration may depend on BBQ)
Spring Mix Salad Recipe
Makes 2- 3 Servings
Ingredients
- 4 cups of Organic Spring Mix
- 1/2 a Cucumber
- 2 avocados
- 1/2 of a Lime
- Salt
- Olive OilDressing
- 1 Teaspoon of Maple Syrup
- 3 Tablespoons of Olive Oil
- 3 Tablespoons of Balsamic Oil
Directions
- Grab a medium size bowl. Slice up cucumber and add into the bowl with washed spring mix.
- Cut avocados in halves. Mix together the juice from 1/2 of a lime and a drizzle of olive oil. Coat the avocados in the mixture and sprinkle with salt sparingly.
- Put on the BBQ for 2 – 5 minutes, do this at the tail end of cooking the chicken.
- Mix together your dressing in a small glass. Pour ingredients over salad.
- Cut up avocado and toss into salad.
- Plate the salad with the jerk chicken.
I was cleaning out my fridge so I also added BBQ cauliflower and BBQ peppers into the salad. Salads are easy because you can basically add any vegetable to them to mix things up.
The barbecued avocado is my favourite part of this salad, because it helps neutralize the spice from the jerk chicken.
