I have the worst sweet tooth. It seriously takes over, meals never seem complete unless I have dessert. My lady time is the worst, all I want is chocolate and ice cream…or both. I am not picky at all. I have really let the summer take over, so I finally took control and decide to start preparing some healthier alternatives. I first saw this snack on Instagram, I can’t remember the user, but figured I could easily concoct this on my own.
Ingredients
2 Bananas
1 Tablespoon of Coconut Oil
All Natural Peanut Butter
3/4 Cup of Dark Chocolate Chips

Wax paper/ Tinfoil
Double boiler

Directions
Step 1
Lay a piece of tinfoil or wax paper on a baking sheet. Cut the bananas into 1/2 inch slices and lay flat on the backing sheet.
Step 2
Smooth a thin layer of peanut butter on each slice of banana
Step 3
Use a double boiler and melt the chocolate chips. I used a glass bowl in a pot of water. I set the temperature low/medium, because it is very easy to burn chocolate. Add the tablespoon of coconut oil in with the chocolate. Stir constantly until all chocolate chips are melted.
Step 4
Wait until the chocolate has cooled, so it is a little bit thicker and easier to work with. Then drizzling it on the sliced bananas. Use a teaspoon and completely cover each dollop of peanut butter. To get the access chocolate use a spatula.
Step 5
Place baking sheet in the freezer. The banana snacks should be ready to eat after 5 – 10 minutes in the freezer. I usually only eat one or two to satisfy my craving, so I store the rest in a container in the freezer. Two bananas makes roughly 20 bite size pieces.
Enjoy! You can make them more interesting by using crunchy peanut butter, sprinkling crushed almonds on top or trying different types of nut butters.
