I wouldn’t say that eating Paleo is hard but you just have to be prepared. All day I have been dreaming about a big juicy steak, preferably with mashed potatoes but those aren’t Paleo. I decided to compromise. I picked up an amazing rib eye, did an hour workout at the gym and decided that I could treat myself to a somewhat starchy carb.
I took my steak out and put some olive oil and salt and pepper on it. I wanted to let it heat up to about room temperature before cooking it.
For my root vegetables, I diced beets and sweet potato. I preheated my oven to around 400 degrees. I tossed the vegetables with rosemary. I threw them in the oven for about 50 minutes.
Once my vegetables were almost cooked, I heated my pan on high heat, cooked both sides for two – three minutes then threw it in the oven for another 8 minutes on a broiling pan. I like my steak medium rare so it came out perfect.
I know there are a couple Paleo fails, salt is something that I am finding completely impossible to avoid but I have decided to ease into my new diet plan with an 80/20 mix. It also wouldn’t hurt if I chose a less fatty cut of beef to fry up, but I have always had a soft spot for rib eyes. Portion control is also key.
