    Medium Rare Top Sirloin Roast

My go-to meal when trying to make a nice dinner is a prime rib roast. I use the same method every time and it comes out amazing. The weather has been changing and it has me crazing comfort food. Prime rib while always tasting amazing is quite pricey, so I decided to try making a sirloin-tip roast. In the pasts, my attempts have been very unsuccessful. The meat is either completely overdone or tasteless. I think I have finally found the magic recipe for a tender and flavourful roast, no slow cooker required. I stumbled upon this recipe on Frugal Mom Eh’s blog and it is pretty amazing. I was so…

Jerk Chicken & Spring Mix Salad

I threw together this jerk chicken salad and posted it on my Instagram Story and got quite a few comments. I thought I might as well post the recipe. This is the perfect meal for a hot summer day when you don’t want to turn on your oven.  Jerk Chicken – for at least 4-6 hours | Overnight is preferable Makes 2 -3 Servings Ingredients 1/2 Packet of Onion Soup Mix 3 Tablespoons of Olive Oil 3 Tablespoons of balsamic vinegar 1 Tablespoon of Grace Jamaican Jerk Seasoning 6 Chicken Thighs  Jerk seasoning is very spicy, so I try to combat the spice by adding other elements. I will usually use a…

    Skinny Potato Soup

In the winter, soups are perfect for soggy Vancouver days. I have always had a soft spot for loaded potato soup, however it is not the healthiest meal choice. I have experimented with Cauliflower pizza and cauliflower mash, so it seemed like a natural progression to use it as a replacement in potato soup. I added one potato, just to give it the potato flavor.  Makes 2 servings  Ingredients 3 Crushed Garlic Cloves 2 Diced Shallots 1 Teaspoon of Cayenne Pepper 1 Teaspoon of Dill 1 Head of Cauliflower 1 Yukon Potato 6 Slices of Bacon 1 Tablespoon of Olive Oil 2 Cups of Chicken Broth   Optional toppings: Greek yogurt…

    Must Try Laksa Recipe

The winter months have really put me in the mood to have comfort food. I have gotten into the routine of trying to make a soup every Sunday. I usually half the recipe otherwise I would have to eat soup for my next four meals. I found this recipe online and took my own creative liberties. This is not your typical laksa, I like to load mine up with as many vegetables I can find in my fridge!   Recipe makes 2 servings Ingredients 6-8 Large shrimps (raw or cooked) 2 chicken thighs 1 teaspoon of fish sauce 2 sticks of celery 1 handful of brocolli 2 carrots…

How to Make a Perfect Roast

I always found the task of cooking a roast so daunting. I never really understood the meat thermometer and there is a fine line between medium rare and overcooked. My co-worker sent me a simple and effective way to cook the perfect prime rib roast. This is the most useful recipe of the holiday season, if you are planning to cook a roast for your Christmas feast. The recipe uses the closed oven technique, and it is seriously so easy and will seem so impressive to guest. It will seem like you have been slaving in the kitchen all day, way easier than basting a turkey. The only way you can mess it…

Pizza Night – Kale & Bacon Pizza

My boyfriend is a terrible cook. Usually guys have one or two signature dishes they can cook to woo a girl. In the whole three years we have been together, my boyfriend has prepared me two meals, both being breakfast. He can make fried eggs, and toast with cheese, that is his specialty. I wanted meal prep to be fun, so I forced him to browse through my Pinterest and find recipes that interest him. We had a pizza night and tried making this amazing Garlicky Kale and Bacon Pizza from Just a Taste. It was so good, that it has now become a staple in my life. I have simplified the…

Snacks – PB & Chocolate Banana Bites

I have the worst sweet tooth. It seriously takes over, meals never seem complete unless I have dessert. My lady time is the worst, all I want is chocolate and ice cream…or both. I am not picky at all. I have really let the summer take over, so I finally took control and decide to start preparing some healthier alternatives. I first saw this snack on Instagram, I can’t remember the user, but figured I could easily concoct this on my own. Ingredients 2 Bananas 1  Tablespoon of Coconut Oil All Natural Peanut Butter 3/4 Cup of Dark Chocolate Chips Materials Knife Baking Sheet Wax paper/ Tinfoil Double boiler …

Fried Rice ( I wish) – Chicken Cauliflower Fried Rice

I fell off the wagon hard yesterday, I faleo-ed hard! Lets just call it a cheat day. Not only did I forgo my usual fitness tracker app because I am way too embarrassed to even admit to myself what I ate, I let portion control go out the window. My boyfriend and I had planned on going to an outdoor movie. Once he was showered and ready to go, it was 8:00 and I still hadn’t eaten yet. Our dinner consist of cookies, chips, macaroni and cheese and fried chicken! Today I feel nothing but shame. I started today with a healthy smoothie, and I had a salad and protein…

    Steak and Root Vegetables

I wouldn’t say that eating Paleo is hard but you just have to be prepared. All day I have been dreaming about a big juicy steak, preferably with mashed potatoes but those aren’t Paleo. I decided to compromise. I picked up an amazing rib eye, did an hour workout at the gym and decided that I could treat myself to a somewhat starchy carb.   I took my steak out and put some olive oil and salt and pepper on it. I wanted to let it heat up to about room temperature before cooking it.    For my root vegetables, I diced beets and sweet potato. I preheated my oven…
